Have you ever had eggplant salad? You may think?
It is the perfect side dish or appetizer. The ingredients are 1 eggplant, 1 onion, chopped fine tablespoons oil, salt and pepper to taste 1 Preheat oven to 350 Spray baking pan / dish with cooking spray. Place eggplant on baking dish and roast for 30-45 minutes, or until eggplant soft and tender. Allow eggplant to cool and rinse with cold water. Pull off skin and remove seeds. Spoon out the pulp and in medium bowl. Mash pulp with chopped onions. Oil and salt and pepper. Place in bowls and garnish with tomato wedges, etc., parsley
